i'm a little more north, but i'm having the same issue. we're having our whole wedding, reception too, outside. it's at the end of feb. like you said, you never know. it could be super cold or people could be sweating. we're just going to hope it's nice, nothing else we can do.
Our wedding is in 2 weeks. Ceremony outside, reception inside. I think as long as it's not raining we'll be fine.
I just went to a wedding in Hilton Head, South Carolina and they had an outdoor ceremony with an indoor reception. The temperature was about 50 degrees and the guests were fine. Hand warmers were available for those who were cold, but everyone had a great time! My wedding is in March in Charleston and we're doing an outdoor ceremony/indoor reception and I think it is going to be fine. 
Florida weather this time of year can really vary. Yesterday I needed my winter jacket, but this time last year I remember it being really hot! I say go ahead with your dream - you should have what you really want on your wedding day. But have a few back up plans in mind that you can jump on if it is cool - heaters, shawls or blankets for the guests?

I have my heart set on an outdoor wedding (w/ indoor reception) at a local botanical garden next January (2011). This whole time I've been thinking "I've gotta figure out how to keep my guests cool."
Well when I got outside this morning it was 54 degrees. And all of a sudden panic set in. It had never occured to me that it may be cool instead of hot on my wedding day. I've been to other FL January weddings where the temp was mild/more on the warm than cold side.
I know the FL weather changes at the drop of a hat; one week it's 60 and the next it's 80, but now I'm freaking out.
Can anyone weigh in on the subject?
