I love the gray! And especially vests! I agree that a skinny tie would really look good, and pull the whole ensemble together, too.
I've shown my SO some vest only options and he loves the idea. I think it's great since the men usually take their jackets off for most of the night anyways and it looks really modern to me.

My only concern would be that this a kind of a casual look.. so the rest of your wedding should fit that theme as well.
