You still have plenty of time, well over a year to do it!  So it’s not like you need to be scrambling.  I think that’s good you put your foot down.  It’s your wedding.  And it’s okay to want things a certain way, but just don’t let things get out of control with one day.  It’s not just “your” day, it’s about two famililies coming together so it is important to take some of their wishes into consideration.  But they definitley don’t get to dictate the whole thing.

Have you outlined budgets to them?  When my parents got married, they had a LOT of people and I think spent $2-3K (it was 1979).  Clearly prices have gone way, way up.  Remind them that each extra person costs more for food, alcohol, linens, flowers, chairs, tables, etc.  If they still aren’t budging, I would say decline their offer of money and host the wedding you and your FI can afford.
