Well, since I used to be a caterer, I will try to answer some of your questions on the professional side.
I have not personally used them but from everything I've read, they are very good. They are clear and concise on their website, they have a FAQs which you can read as well as exactly what you should expect from them, from beginning to end.
Unless your catering food is a different culture I don't see why you should worry about not being able to taste exactly off of your catering menu. If you had a dish you really were wary about, I would bring it up to them and see what they can do.
You can ask them for reviews from clients, most companies have them. Or to get information from past clientele. They look very professional and very clean. The food looks modern and fresh so I would say go for it.

Has anyone ever used Peppercorn Catering in Manson (near Lake Chelan)? We are looking into using them but were told we wouldn't be able to do a tasting. We are going to try and taste at least some of their food and not necessarily our menu.
We wanted to know if anyone has ever used them and what your experience was. Both taste/quality of food and working with them.
