Lol 5 ravioli? FIVE?!

I had leftover BBQ chicken and broccoli. But on days I forget lunch it’s usually some sort of cold deli sandwich or salad…womp womp.

Lol Oh 6? THANK GOD!

I’m terrible at figuring out what to eat for lunch. I have great ideas/recipes for breakfast, dinner, and deserts but never lunch!

It always ends up being something quick and terrible for me or leftover dinner lol

With just myself and DH we tend to always have left overs.  I actually plan most days to have left overs.  Today’s was last nights porkloin stuffed with apples and cornbread with extra roast apples and goat cheese mashed sweet potatoes.  The biggest problem comes when DH’s office orders in lunch and gets me off my schedule and the left overs start piling up!  One day can through my entire week off.

RedHeadKel:  Ugh. I had microwaved banquet meals twice last week because I didn’t make time to prepare lunch, so I know how you feel.

I saw this message after I finished eating, but my lunch today was pretty creative, I think.

I had “sandwich kabobs”. On a skewer I put cherry tomatoes, pickle chips, smoked turkey breast and cheese cubes. I also had cucumbers and an apple.

i had a base cobb salad(no meat/chicken) with berry balsamic vinaigrette dressing. it was soo good.

I had a leftover gyro (thanks to my mom making them for my birthday this weekend) and some carrot sticks. I’ve been packing my lunch every day for almost 2 years now. It varies week to week. It’s nice though because we have a full kitchen at work and I can keep things here and cook some stuff on the spot. I’ll prep the week’s lunches Sunday night. 

In the summer I’ll usually bring salads. I buy a bag of spinach, a bag of carrot chips, sesame seeds, dressing, and then either frozen chicken strips or if i have time to grill chicken breasts. The spinach & carrots are perfect for 5 lunches and the other things usually last 2-3 weeks worth of salads.

On 4 day weeks, I’ll usually buy a package of sausage of some sort because those tend to come in packs of 4 (why?). My grocery store has a pineapple chicken sausage, apple chicken sausage, and italian style chicken sausage that are all pretty good. 

Eggs are another staple lunch of mine.  I usually pair them with a piece of toast. I’ll make them fried and dip my bread or scrambled with a little cheese. 

I also like to make little pizzas in our toast oven at work. I make them with pitas and then some variety of toppings  (pizza sauce + artichokes + chicken + cheese) (hot sauce + cheese + ground chicken/turkey) You can get pretty creative with this… whatever you like.

Sometimes in the winter I’ll make soup for the week.  

I always make sure I eat a vegetable for lunch, so if my actual meal doesn’t include one I’ll bring one for on the side. Usually carrot sticks and yogurt blue cheese dressing to dip them in. Sometimes I’ll steam broccoli or even cook up some asparagus (my favorite!). 

I usually have a greek yogurt or something else for the afternoon too. I hope that helps give you some ideas! I’m sure this will probably be changing a bit for me in the near furture since I’ll be moving out of my parent’s home finally. If anything I think that should make it a lot easier.

I’m trying to eat low carb for lunch. Lately I’ve been doing two hard boiled eggs, a veggie (pepper or carrots usually) and an apple or grapes. But I’m trying to eat eggs for breakfast this week and see if I feel better than the spinach smoothies I’ve been having, so today I had a mix of grape tomatoes, green pepper, baby carrots and celery with a bit of hummus (low carb for the amount I eat) and a honey greek yogurt. 

Man, I’d love some pizza though.

Today I had leftovers of Thai chiken quinoa bowls. Like fried rice, but with quinoa instead. I liked it!

I had a sandwich and chips. But usually it is soup. We have “Soup Sunday” in our house, and I make a soup each Sunday. So during the early part of the week lunch or dinner is leftovers. It also freezes well! You could always portion it out into tubberwares as well.
