I would do two pies each of the popular flavors. It lets more people try each flavor! That way you don't have one pie everyone wants and one little sad pie no one wants.
I would do two pies in the popular flavors, like apple or cherry, and do one pie in some of the other flavors.
I really like strawberry rhubarb pie :)
If you do decide to only make a couple flavors, I would have at least one fruit and one cream, because some people hate fruit pies and some people hate cream pies. If you did that at least you would have both options.
I am worried about people not being happy with just fruit pies too. But then I think about making cream pies and I get nervous. Do you think people who don't like fruit pies could just have ice cream, no pie?
In the choices that you gave, I would definitely go for chocolate cream. Otherwise, my all time favorite is sugar pie! ;)

As some PPs have said definitely have some mixed options of fruit and cream pie choices. If this was an event I was planning I would ask my client if she cared about running out of the more popular flavors like apple or pumpkin, if she did I might suggest to have more of the popular flavors and less of the less popular. Also keep in mind that you'll have to gauge what's popular, some people may know their family are big apple eaters but they may not be as fond of cherry so use your judgment as well. Don't forget to ask relatives who might hold holiday functions and the like for their help in gauging what flavors you might need more of.
The pumpkin sounds good... and I would sugget rubarb/strawberry pie
mmm these all sound soooo good! I'm hungry for sweets now. I'd say keep it simple and classic with a twist!

oh and definitely what the above poster said about strawberry/rhubarb! Also sweet pies like chocolate or peanut butter.
OR just base it by whats in season in your area.
I think if you did just want to have the fruit pies you could get away with just ice cream. Like some of the other bees said, I would check with other people and see what flavors are more popular in the family. :)
My future hubs (who knows and sometimes participates in my WB obsession) is voting CHERRY! all the way...I make him cherry pie for his bday instead of cake!
and I am voting for a blueberry strawberry creme...mmm! it is amazing!!!!

So my mom and sister and I are going to be making pies to serve at the rehearsal dinner/welcome bbq we are throwing on the night before the wedding. We are inviting all of our family and are maybe looking at around 50-60 people so maybe 8 pies total or more depending on final count. I am the worst decider ever so I was hoping to get some input on the pie flavors we should serve. Here are our options:
-Blueberry, blackberry, apple, cherry, pumpkin, chocolate cream, sour cream lemon... Any other suggestions?
We are also trying to figure out if we should have eight pies each in a different flavor or offer more like four flavors and have two pies in each flavor. Any input on this?
Mostly I am trying to get feedback on what kind of pie you would want if you were in attendance. I am worried about having only one kind of each pie and then running out of the flavor everyone likes. But it would probably be easier to make multiple pies of the same flavor. I am also worried about having fridge space for pies that have to be refrigerated. And just in case it makes a difference, we will be serving them a la mode. ;)
