i think it would be great! i would just leave thier place as is. my brother had thier rehearsal dinner at our local pizza place and everybody loved it. it's good food, and everybody is comfortable and casual.
honestly my fi and i went to another rd at a fancy restaurant and it was very fancy and stuffy. we didn't enjoy ourselves and the food wasn't even good. we pretty much talked the whole time about how we made the right decision to go casual for our rd!
We had a very simple rehearsal dinner at home, and for awhile we were considering pizza, but we cheaped out further and just bought food and made it. The rehearsal dinner does NOT have to be fancy if you don't want to, or if you want to save costs. My personal thought on the rehearsal dinner is that the next day, everyone is going to be all dressed up and on their best formal behavior for most of the day. I think the rehearsal dinner is a great way to just kind of relax and unwind and enjoy things before everything else gets crazy.
I think pizza for your guests sounds great. Honestly, as long as guests get to eat, I think they are happy :-)
I know that my guests probably wouldn't even pay attention to the decor, so I wouldn't put a lot of time/ effort into that aspect, although I'm sure everyone's guests are a bit different, so maybe your guests would care (you would be the best judge of that)
Edit: To help reduce costs, we are actually holding our RD at a relative's house. Family is making food and it should be fairly low key. Our wedding will be much more formal than that, so a relaxing evening the night before sounded good to us.
Another vote for the casual RD. We're having pizza, maybe sandwiches, and really just using the time to enjoy each other before all the hustle of the wedding.
Seriously, I'll probably wear jeans.
Okay cause I feel like I can't plan one more thing (haha), do I do a pizza buffet and offer a few different types? I think I will get a big salad from Wegmans.
Depending on your guests, I would order plain cheese pizza, one type of meat pizza (someone a lot of people like - sausage, pepperoni, etc), and one type of vegetable pizza. I would add a salad (like you mentioned) and some breadsticks, and just leave it like that.
We are having our rehearsal at an Italian Club we belong to and it's not formal nor dressy. It's a great club and they have a limited menu WITH pizza which is delish. I think having pizza for your rehearsal dinner is a great idea.

There is a semi-decent pizza place near my church that we have thought about using for our RD. We are trying to reduce cost.
What are your thoughts on this? As a guest, would you mind?
And how can I make it a bit more elegant? I was thinking about having little bundles of fresh veggies on each table and some thin bread sticks.
Should I keep their plastic, rustic friut-looking table clothes or buy some plastic white ones? I don't want to spend too much time on decor.
