We started planning a little before we were engaged... like talked about venues.
I was planning even before we were engaged! I just waited to contact vendors once I had the ring on my finger. 
I waited a couple weeks. It was when we were kind of pushed in to picking a date that I figured I should get to it.
Set teh date almost immediately but didnt do any major planning for about a month.
We actually kinda started planning BEFORE we were officially engaged. We set a date and we had our photographer picked out. Right after we got engaged we had our travel agent and cruise picked out. I'm not going crazy with planning, but I figure I want to try and do one thing a month, If I get more done, I get more done. This month was putting the deposits down for the cruise oh and I found my dress! but I just haven't paid for it because I have so long before the wedding, I'm going to wait to see if it goes on a great sale, and next month will be giving the photographer the rest of the money for their deposit (we are paying for them to go on the cruise so they used that as a part of their deposit). September we are going to do our engagement pictures, and october will probably be save the dates. Thats all I have planned so far, but I think its a good track to follow.
I waited until the day after we got engaged : ) We got engaged in November 08 and knew we wanted to get married in summer/fall 09 so needed to jump on it right away.
After being together for 8 years we (er, me?) could not wait any longer!!
