contact “the communities”! As a nigerian-american that has attended many nigerian-american weddings, i know that there’s always the “aunty” that caters weddings with yummy cultural fare. My fiance’s puerto rican community is the same way;  there’s always a “tia rosa” that will hook up la boda with pernil, pasteles, and arroz con habichuelas. Usually, because there is no “storefront”, the food is much cheaper too, if anything they charge you the costs of the groceries. Just ask your family and have him ask him family who has provided food for events in the past, and get in touch with them!

Well,  my future brother in law is Taiwanese and owns a restaurant. A lot of his dishes are very spicy and yummy. He makes an excellent basil chicken stir-fry. What about lettuce wraps and tacos? Maybe prepare the meat in the lettuce wrap with Asian spices and the meat in the taco with Mexican spices?
