I say go for it!  When hors d’oeuvres are served at our wedding, they will just be on little paper napkin/paper shell type things.  I think the pictures in your example are really cute and unique.

I think you can do the neat presentation if you use some plastic wear.  You can still ask that when the servers collect the plates/forks/etc that even though they are plastic you keep them.  You can then wash them and use them around the house in the future.  Also, if a few do accidentally get thrown away you aren’t out a ton of money.

We do this around my house with solo cups.  1 package will last us MONTHS because I just keep putting them in the dishwasher, and then slowly they accidentally get thrown away or left somewhere and we replace.

You shouldn’t ever reuse plasticware that is made to be disposable. I hate to be the eco-freak here, because i am really not (love my car!) but plastic has some scary chemicals in it that we don’t really know the consequences of on the human body!

I immediately thought of the Bambu products too (the branchhome.com link)!  I use them for informal dinner parties because the clean-up is so much easier, and they’re relatively heavy and solid.  I think they’d work nicely for tapas.
