I have no idea if this is a silly idea, but could you cut up very inexpensive white sheets and pin them to the quilts (on the underside) to make them longer?

A standard size table cloth roll isn’t wide enough to cover a round table to the ground.  You would have to cut two pieces and tape them together to get the look you want.  Maybe one of these would work:

If the quilt covers the whole top you can hang the skirt to cover just the legs.

Or

Would these fit your rounds?

Yeah, I imagine the first few might be slow going, but after that it would get faster! Do you have family around/can your FI help? I was recently at a wedding on a farm, and those tablecloths didn’t reach the floor (just was tagged in some pictures, so I went back to look–didn’t notice the day of). I think plastic or paper will be kind of crinkly and loud, but the quilts might muffle a lot of the noise. Have you checked wedding websites to see what other people with barn weddings have done? Is renting longer white cloths an option?

Or you could use the roll of table cloth to make a skirt.  Use some tape to fasten it to the edge of the table and wrap it around.

Plastic banquet roll is usually 48 inch wide. fabric sheeting may work better for you,

@kho6107: Amazon has 120″ disposable cloths:

http://www.amazon.com/Look-Cloth-Tablecover-round-white/dp/B004O5LLJG/ref=sr_1_17?s=home-garden&ie=UTF8&qid=1393648395&sr=1-17&keywords=disposable+tablecloths

The table skirting mentioned above would also be perfect for your needs. The circumference of a 60″ diameter table is 188.5″ or 15.7 feet, so you would need a bit more than one set of skirting for each table. Then just lay the quilt on top.
