Sweet Potato Croquettes with shaved country ham

Mixed field Greens w/ local tomatoes and fried Vidalia Onions, tossed with a dijon vinaigrette

Pepper seared filet of beef with Burgundy demi glazed

Seasonal vegetables with a balsamic glazed and sea salt

I saw “southern food” and had to reply!! LOVE ME SOME GOOD SOUTHERN FOOD!

So here is what I would choose based on my southern roots and taste buds! :o) I also took into consideration how well they would mesh with the items that you already selected.

  • Mini Corn Muffins w/ Pulled Pork  – (cornbread and pull pork? Light up the BBQ baby! This is southern at its best!)
  •  

  • Crisp romaine and wild rocket greens with fresh strawberries and honey glazed walnuts and raspberry vinaigrette. – (Im from FL so strawberries are grown here and a staple. Since your appetizers and proteins tend to be on the salty side, this would be a refreshing break in between)
  •  

  • Pepper seared filet of beef with Burgundy demi glazed – you already have chicken and then seafood; maybe pulled pork as an appetizer, so I would add in a beef protein for dinner (I always choose beef for my dish when I attend weddings… don’t like chicken and IMO seafood is always overcooked when the place has to cook alot of it).
  •  

  • Collard Greens with fried garlic – C’mon now!! You are having fried chicken, shrimp/sausage and grits.. You have to have some collard greens… there is no other southern way to do it! :o)
  • You’re menu sounds sooooo yummy! I wanna come! :o) Good luck with everything! :o)
