Yep, I'd say green veggie, too, though I prefer the sugar snap peas.
I would suggest doing a chicken with out a meat in it. I and know lots of others who dont eat any meat but chicken and turkey and Im always bummed when the chicken option has ham or bacon in it. IMO it defeats the point of a chicken dish. Normally the vegetarian dish is too vegetarian for me also
Ok, cool, I was thinking the country style green beans so I'm happy to see that the responses you all are posting are along the same lines of what I was thinking (or at least another green vegetable) :-) Yay!!! Why are these silly details so stressful, haha. Thank you all!!

One question-do you have any vegetarian guests? Will your venue accommodate them?
I think the ribeye is a good choice but I personally would not choose the chicken dish as I am not a fan of ham & cheese stuffed chicken. I would opt for chicken picatta or marsala or the dried cranberry & pecan glazed chicken.
I like the starch choice.
I would also pick asparagus or green beans in addition to the carrots. I do not think that is too many vegetables.
If you felt like you needed more I would add another vegetable before a startch. A lot of people don't eat salads so having a second vegetable wouldn't hurt.
However, I think you might be fine with what you have, even more so if your having hors d'oeuvres. During any sit down wedding I've been to the entree had a protein, startch and one vegetable.
Well, you can't go wrong with potatoes, so I'd say veggie medley sounds like there's bound to be something for everyone! Sounds deeeeelish though!
I would not have a steak and then have chicken stuffed with ham. I agree with others than the chicken shouldn't have meat stuffed inb it. Also, I would add a green veggie and if possible, a pasta dish that could work for vegetarians and others.
I am also going to jump in as a chicken stuffed ham hater... It just doesn't sound like its going to "go" as well with the beef. I agree that the marsala would probably work a little better.
I'd also add an extra veggie. Any will do :) You have a huuuuge selection available to you! What a difficult decision.
Thank you all SO MUCH!!! I am so comforted that the majority (if not all) of you have recommended the extra veggie. I think we are going to go with the green beans. Luckily there are no vegetarians. And thank you for the advice on the chicken! I have emailed our reception venue to see what they recommend. My FH is a little bit of a groomzilla and I think he really had his heart set on that chicken so it's going to be tough to explain to him that we need to be more accomodating to our guests with this one menu choice. Thank you all SOO MUCH!!!! I love WeddingBee!! :-)

Ahhhhhhhhhhh, I keep going back and forth on what we have chosen for our buffet menu!!! Any help would be much appreciated :-) So far we have tentatively decided on the following: (2 entrees) the Sliced Ribeye Au Jus which will be served via a carving station and the Boneless Chicken Stuffed with Country Ham & Cheddar; 1 vegetable: Cinnamon & Honey Glazed Carrots, 1 starch: Garlic Mashed Potatoes, and we will also have a salad and have chosen Ranch and Raspberry Vinaigrette as the dressing choices. My question is, does this sound okay? We also will be able to add either one more vegetable OR one more starch. Which one, out of all those choices below, would be the best pick? My dilemma is, adding yet another veggie (already have the carrots and the salad) but if we add another starch, none of them really "go" together, but does that really matter? Thank you for any advice!!!! :-)
