Fiance and I love breaded chicken, breaded pork, meatballs, etc… but we’ve been eating low-ish carb (<100g/day) and don’t want to waste carbs on breading… anyone have any good recipes using crushed pork rinds as breading. We found an excellent fried chicken one but would like to try something different!

Hsve you thought about crushed almond or sesame breading? That may be a higher-protein, lower sodium, lower fat option that gets you the crunch you’re looking for without all the stuff that might be counter-productive to your diet. Dip your chicken/pork/whatever in egg white wash then roll it in sesame seeds straight from the jar, or in almonds chopped up very fine (but not to the point of a powder).

@fishbone: We’re not worried about fat content, and Fiance detests sesame seeds for some reason LOL… doesn’t even like them on his burger bun haha… Almonds would probably be delicious on pork or chicken though! We’ll have to try that, thanks!
