    I'm having friends over for dinner and my one girlfriend only eats chicken.  I've exhausted all my own chicken recipes and just curious if anyone has a really good one that they care to share!  Thanks! :  )

    I really like Spinach Stuffed Chicken Breasts.

    This recipe with mayo or this recipe with sour cream (both from AllRecipes.com).

    Pound boneless chicken breasts until even.  Cut a pocket into the side of the breast but don't cut all the way through, and don't cut either end.  (Think of it like a pita pocket.)  Fill the pocket with a mix of feta cheese, mayo, spinach, and spices (I like spicy hot flavors or garlic). Place the stuffed breasts in a casserole dish.

    I don't wrap the chicken in bacon.  I eliminate the bacon altogether.

    To jazz it up even further I will saute some mushrooms in a frying pan and then de-glaze the pan with red wine.  Add a can of cream of mushroom soup and simmer for 10-15 minutes.  Either pour the red wine mushroom sauce over the cooked chicken and serve, or serve the red wine mushroom sauce in a gravy boat on the side so guests can add their own sauce if they choose.

    This is one of my favorites. It's actually a weight watchers recipe, but it doesn't taste like it!

    It makes 6 good sized enchiladas

    Ingredients

    • 1 cup fat-free sour cream

    • 1/4 tsp black pepper, Dash

    • 1/4 cup salsa

    • 3/4 tsp ground coriander

    • 1/2 cup onion(s), Chopped

    • 6 medium flour tortilla(s), 6-inch, 6 inch

    • 1/4 cup all-purpose flour

    • 2 medium green Bell Peppers, Chopped (3/4 cup)

    • 2 breast uncooked boneless, skinless chicken breast, cooked and shredded

    • 1 cup low-fat shredded cheddar cheese

    • cooking spray

    • 2 1/2 cup fat-free, reduced-sodium chicken broth,

    Instructions

    Preheat oven to 350
    Sautee onion and bell pepper in a sauce pan w/ cooking spray.
    Combine flour, corriander, and black pepper in a medium bowl, gradually add broth, whisking until well-blended.
    Add to saucepan and bring to a boil. Cook for 3 min or until thick stirring frequently.
    Remove from heat, stir in cheese and sour cream.
    Combine 1-cup cheese mixture with chicken and salsa in a bowl.
    Spread 1/2 cup chicken mixture down center of each tortilla, roll up. Place in a 13 X 9 inch baking dish coated w/ cooking spray. Pour remaining cheese mixture over tortillas. Bake at 350 for 20 min or until bubbly.

    I've got a nice easy one that goes over SO well in my house :) And takes almost no time to make :) I eat SO much chicken it may as well be considered its own food group.

    Chicken AllaDonna

     

     

    Ingredients

    1 package of Chicken breast

    1 can of diced tomatoes

    2 heads of broccoli

    ½ large onion

    2 large cloves of garlic

    1 tsp of Corn meal

     

     

    Directions:

    Cut up chicken into your preference of bite size pieces season with salt and pepper and sauté in oil till almost cooked through.

    Add in onions till they are almost transparent and garlic

    Add diced tomatoes and stir ingredients together

    Add in the cornmeal and stir

    Put Broccoli right on top (don’t stir until later) and put lid on to steam broccoli. Once broccoli is cooked through stir all ingredients together and serve hot with garlic bread or garlic pasta!

     

    Note: we also put this on top of brown or white rice (minute rice of course)

    I love red beans and rice with chicken. I never use exact measurements, but basically, i sautee onion, celery, and carrots with a bit of salt until the onions are translucent, cook white rice in chicken broth, and cut the cooked chicken breasts into chunks. Once the rice is cooked, add a can of kidney beans, mix it all together with some more salt, pepper, and a bit of oregeno! yum!

    OHHH one more.. I made this last night.. its kind of a staple.. I use Panko instead of grilled chicken adn i also dont buy the ready made chicken. i cut up and fry my own :) This ones a bit more work though.. but so tasty with some crystals hot sauce on top :)

    Also one more thats super duper easy.. just pop in oven and walk away! Just make sure you REALLY season this well bc it can sometimes turn out to bland for some peoples tastes.. but i love the freshness of it..

    I have so many.  I honestly don't know where to begin.

    I actually just made chicken penne alla vodka.  I used chicken breats which I pan cooked with olive oil, garlic, oregano, basil, parsley, salt and pepper.  I also added parmesan cheese on top of it.  After it was done browning, I cut it into pieces and cooked it in Victoria's vodka sauce.  The chicken would've been delicious by itself.
