Ahh!  I’m numbering mine so that I know who sent it back in case they forget names.  I suggest you e-mail/call as many people as possible to remind them to put their name on it!

I had someone forget to put their name even though the M_____________ was there.  Im sure people will write their names in.

Yes – number them lightly in pencil on the back (small in the corner). I’m going to do that anyways because I know that people will NOT write their name. – AND hopefully they put a return address on their envelope, so you can tell that way too.

Oh no!  There really isn’t anything you can do now though!  Like you said, you’ll know how many people will be there, so at least you’ll have the info the vendor needs.  Are you doing assigned seating?  If you’re not, then its no biggie.  If you are, once you receive the majority of your rsvp cards back, you might have to start calling people!
