Stuff that isn’t messy.  We had fruit, mini muffins (maybe you can find some that are gluten free, the farmers market has some here), yogurt and cheese and crackers (should also be able to find something gluten free).

We had small sandwiches and pasta salad.  We did the sauce on the side instead of on the sandwiches to help with the mess.

You could have a tray of vegetables/fruits of all kinds, with cheeses and dipping sauce. That’s super light and you’ll feel full and refreshed! And it fits your requirements! 🙂

i’m thinking of packing/having some luna bars on hand. they’re tasty and provide a lot of protein and fiber to keep you full.

What about food from a place like Panera? Do you have one of those in your area? They have great sandwiches and salad which would fit the dietary needs of your group. Every one can choose what they want and I think they deliver. I’ve seen their vans 🙂
