I've been thinking the same thing for an October wedding. I'm doing espresso dresses, and champagne gold for my MOHs and not sure on flowers. I've been googling ideas..I've seen pumpkins with different flowers in them...
We're using pumpkins as part of our fall themed wedding next year. Here are some of the things we are planning to do...

Every other table centerpiece will be similiar to this (but with a white pumpkin instead of orange).

Our ceremony isle will be lined with pumpkins and gourds.

The escort cards will be attached to white gourds.
Thankfully my parents grow pumpkins so these will all be free. Score!!
First bit of advice- get out there now and see what's available and marked down
a mogrammed pumpkin- perhaps on the bar
centerpieces
white pumpkins are cool too- not so stereotypical

mini pumpkins as table numbers are place cards

metal pumpkin shaped containers for centerpieces
I was in a wedding back in 2003 where the florist had flowers coming out of a fake pumpkin and our favors were mini glass pumpkins. I happened to win the centerpiece, my mom took it and took mine, my date's and her and my dad's favor and uses it every fall to decorate the dining room table.

Using Fake white pumpkins for my centerpieces. Still playing around with exactly how to decorate them. They are carvable but I haven't tried that yet. When I do I have some battery operated tea light to put inside.
@rosieposie1112: would real pumpkins cost you less than fake at this time of year?
I threw a simple reception for my son and DIL. I used pumpkins for the centerpieces. Some of them I painted with gold glitter paint, others I left plain. I sprayed each one with a clear lacquer. They were really cool. The pictures don't really do them justice.

On the far right you can see a pumpkin that I cut the top off of and floated candles in it.
One of the unexpected benefits of spraying the pumpkins was that it sealed them off from oxygen and they lasted forever. My ex took one of the big pumpkins with a huge stem home and it was still in good condition at Christmas. He LOVED that pumpkin. LOL
@sfchick: The cost was about the same actually. The medium size I have for the centerpiece was $8. I tried to contact local farms to have some grown for me but they really weren't very helpful. Basically they couldn't promise me specific quantities and so I would be waiting at the last minute to get enough together and decorate. Plus not a lot of farms grow the white pumpkins and I didn't want to have to paint the orange ones. I have been thinking about checking the farms last minute to get a bunch to line the aisle with. :-)
I have some pumpkin centerpieces for sale if you are interested. Ships from Texas. Buyer pays shipping but local pick up can be arranged.
Pumpkin Centerpieces- I have 7 or 8 with purple and white flowers, but those can be changed up easily. They also have a white or silver glittery butterfly inserted in them to give them a bit of sparkle. I have probably 10 more pumpkins that haven't been cut on the top. They are from Michael's, brand new with tags, and the perfect size for tables (long or round) that sit 8-12 people. $20 for the premade ones and $8 for the new ones. These looked great at our wedding and we got so many compliments!
I prefer the white pumpkins to the orange ones. The orange ones can look a bit too "theme"-y, IMHO.
