The last one sounds great! Really, all of them sound good, but the last one sounds out of the ordinary (as long as your guests aren't vegan!)
I'm a veggie and I can not stand risotto. It depresses the heck out of me that it's always the standard veggie option, so anything other! But that's just me, of course. I voted for the lasagne!
I used to be a vegetarian and I love vegeatarian food! So I felt I should weigh in on this. I voted for number 1. Sounds delicious!
I am not veg but eat veg a lot with my friends who are veg... if you put goat cheese on a brick I will eat it.. My vote is 4
Not sure what a Napoleon is or arugula but.....
Goat's Cheese = instant win.
Super predictable wedding foods: risotto, stuffed peppers, stuffed butternut squashes.
I voted for the squash blossom. Mostly because of the goat cheese. You could roll goat cheese in dirt and I'd probably still eat it haha. The Tatin sounds good too so that would be my second choice.
I'm vegan and the first option sounds amazing!
The last one sounds like the best use of seasonal produce around your wedding date (butternut squash is great, but not really a spring vegetable; ditto for celeriac and other root vegetables).
Oh, and although I love lasagne (served it at my own wedding), it had better be good - in addition to risotto, lasagne is the other standard vegetarian option, and when it's mediocre it's just so depressing. But your menu choices all look thoughtful enough that I would assume the execution will also be good.
Just Googled arugula and got a surprise. The name doesn't fit it at all - I was expecting something nobbly like a jerusalem artichoke! Maybe because it sounds a bit like a spider? Anyway, that made me laugh. A bit like the time my friend and I googled cilantro. We thought it was super-exotic and we'd never find it here. Turned out we had pots of it under a different name!
@VickyAurea: Hehe, it's basically a peppery lettuce. Really tasty! A napoleon is a fancy term for anything with layers.
@historienne: Agreed. They generated that menu recently so it is more seasonal for now. I think if we chose risotto, they could tweak it for something seasonal. They're definitely big on farm to table.
The goat cheese comments crack me up...I could eat it off a brick too, fer sure.
They all sound great, but I the last one sounds especially good...I agree with PPs...goat cheese :)
ETA: Well, and roasted garlic...yum...
Just adding.. just because someone is vegetarian does not mean tehy are a fan of mushroom.. I know lots of people who HAT emushrooms and myself being a veg have problems of finding non meat dishes without mushroom because I am allergic. SO, the last options sounds AMAZZING!!!!
Yeah, I was concerned about the mushrooms because I know that's the go-to "meaty" option for vegetarian dishes. I personally love mushrooms but not as much as goat cheese. :p
Ye areally the goat cheese sells me on anything.. except on mushrooms of course.. lol

@techie: Yeah, I know what it is now, I googled it. It's "rocket" in my world - I put it on everything.
It would have to be between the mushroom tartin and the root veggie lasagna for me. But I love mushrooms so much more!
Wow they all look delicious! I voted for number 1, with number 5 being a close second.
I agree with PP about the mushrooms. Both my aunt and I are vegetarian and we both also can't stand mushrooms. It's a huge problem for us because every token vegetarian option out there seems to rely heavily on mushrooms.
