If it were me, I’d cancel one of the options, and order 100 each of the full size desserts and 150 of the minis. You might have people who want to sample the different options, especially if they aren’t full sized.

We did a dessert table and made enough for four desserts per person and had SO much left over, I think maybe about 25% was eaten. We had rice krispie squares, brownies, chocolate chip cookies, cinnamon buns and gluten free cookies. I think that if you make enough for two per person that will be plenty.
