I would make sure to go in with some info about what you want/when/#’s/details etc.  Ask about buffet vs plated.  Cost of passed hor’s dourves vs buffet.  Ask for sure about corking costs and cake cutting fees!! Very important!  Ours luckily had none and that was a huge reason we picked our caterer.  Ask about servers and bar information.  They’ll want to know ball park guest #’s and time of day and length of reception.  Keep in mind type of food, organic vs regular and extras such as equipment rental and others (candy bar, day of set up, rainy day plan …)

I found the “Here Comes the Guide” Questions to Ask When Hiring a Caterer to be invaluable when I was interviewing caters.  Just google those things and it should come up – you can even print the list as a pdf and use it at all of your catering meetings to ensure that you have the same information from each caterer you meet.

Is it buffet or served? If it is served I’d definitely ask how many servers are included. The more servers, the faster the service will be.

Water is standard yes – it should be.  But side story: I was at a reunion type event with cash bar at a hotel and they served tea on the tables.  I don’t like sweet tea and wanted water.  I had to ask and complain to get regular water b/c they told me to buy it at the bar!!

We declined tea service at our wedding b/c we didn’t think enough people would drink it and we had plenty of other options.  If you don’t want it, don’t pay for it!

also cake cutting is important b/c not just anyone knows how to cut 150 serving cake into the correct # of pieces well!  Unless your baker is going to hang around all night to cut it after you do the photo cut your caterer will cut/plate/pass out.
