When do you require a head count? When is our final payment due? How late can we make changes to the menu? Does your company take care of all clean-up related to the meal?
That's all I can think of off the top of my head, but doing a google search with your question will probably give you a lot of ideas.
How many hours of service are included? Do we get charged overtime?
Cost of linens, china, stemware, silverware, etc.
If they are providing bartender - is there corkage? Do they provide ice? Where does the water come from (filtered, bottled or tap)?
Is clean-up/trash hauling included
Will they cut the cake and serve? Is there a cake-cutting fee?
Do they provide table-side beverage service during the meal?
How much time do they need for set-up and clean-up?
I think that the responses above are great. I would ask their prices and policies about alcohol. Ask when the tasting will occur/if you have to pay for it. Ask if you will be working with one coordinator throughout the process, who will be in charge the day of. Ask if any other events could be occuring on site at the same time as your wedding. Does the venue allow any vendor you choose (band, flowers etc) or do they have a list of preferred/required vendors? Is security required at the venue? Do you have to pay for security? Parking arrangements?
Another thought is to make sure that your caterer's contract is detailed. Mine outlines our payment schedule, date final head count is required, price for food tasting, length of reception, rules about alcohol, rules about extending the reception time etc etc...
Sorry if the caterer and venue questions overlapped here. My caterer and venue are the same company so that's how my questions were asked.
I think it totally depends on what you are needing your caterer to do. Are they just providing and serving the food? Do you need them to also do linens and china and stemware? What about drinks and alcohol? Do you plan on having them cut and/or serve the cake? What about the champagne toast?
One thing that came up with our caterer was the debate over 1 buffet line or 2 in order to get all the guests processed through the line quickly and efficiently enough.
Also, we have talked about what type of decor the caterer can provide for their buffet table. The one we are going with, we have told them our colors and theme and they just do the rest. They will do a couple of flower arrangements and stuff to make the food look more presentable.
Also check about who will go around and collect the plates from guests after they are done eating.
Also, what about leftovers, will they pack it up in tupperware for you to take home?

I'm meeting with mine in three hours. What questions should I ask, (besides the obvious ones about the menu)?
