Quick Crock Pot Recipes?

    Hey all!

    I am feeling a little lazy today, so I was wondering if anyone had a crock pot recipe that takes 3 hours or less for dinner?

    Meatball and Veggie Stew

    1 16- 18 ounce package frozen cooked meatballs

    1/2 of a 16 oz package (about 2 cups) frozen broccoli, corn, and red sweet peppers or other mixed veggie

    1 14.5 oz can diced tomatoes with onion and garlic or stewed tomatoes, undrained

    1 12oz jar mushroom gravy

    1/3 cup water

    1 1/2 tsp dried, crushed basil

     

    Place meatballs and veggies in crock pot.  Stir together remaining ingredients, pour over meatballs and veggies.

    Cover and cook on high for 3 (or 4) hours.

     

    I've also hurried this up on the stove, but you have to watch it so the bottom doesn't burn.  I like to add some (real) butter for richer flavor.

    Skip the crock pot and do this. This is super "ghetto" stuffed chicken that is still tasty.

    Chicken breast. Slice nearly in half leaving it still attached. Stick any kind of cheese you have and one or more of the following

    1) sliced deli meat like ham, salami, pepperoni

    2) defrosted and drained spinach or fresh spinach

    3) any other precooked and drained (if frozen) veggie

    garlic powder, salt and peper the inside and outside. 

    Then sprinkle some bread crumbs and parm on he outside and bake till done. (about 45 minutes) 

    Microwave some potatoes for a side.

    Make a salad or other easy vegetable.

    It will take as much time as putting together a crockpot recipe.

    @lefeymw:  I'll have to make this for DH... in his single days, he made "Bachelor Chicken."  Just chicken, sprinkled with cheese, and cooked.  Your idea sounds a lot better!

    @jjmomma: Its much better if you pound it out in a plastic bag and then roll it. Its really tender. 

    A great combo is steamed asparagus, cranberry sauce and brie.

    or

    smoked gouda, spinach and carmelized onions (it becomes like a smokey creamed spinach)

    or

    blue cheese and roasted red peppers.

    so many!

    We do chicken breasts in the crockpot with a can of cream of mushroom, a can of cream of celery and a can of cream of chicken soup. It should be done after 3hrs on high -- serve over rice with a side of corn. This is real comfort food. :-)

    @village_skeptic: eek. I am sure that is tasty, but how many people does that serve?

    Sodium alone is probably over 4 days worth in that recipe.

    @lefeymw: Depends on how many chicken breasts you want to include and how far you want to stretch it over the rice. Re: sodium -- the OP didn't specify health food. ;-) If it's a particular concern for you, there are low-sodium versions of all those soups.

    @village_skeptic: good points. In my head I was thinking 2-3 breasts for one meal for two people.
