I’ve always heard 1/4 lb per person, so using that you are just a little short.

But, depending on how many sides and things you are having.. you might be okay.

@jenilynevette:  If you go by a 1/4lb a person, you should chose it by 1/4lb per person, per menu item…  which if my math is correct .25×140= 35lb chicken and 35 pounds sloppy joe.  

You may end up with a lot of people who dont eat sloppy joe.. and will only eat the chicken and vise versa. Its always better to have more, than less.
