Crockpot salsa chicken and black bean tacos (wrapped in butter lettuce leaves) with Bolthouse Farms Avocado Cilantro dressing, pico de gallo, and low-fat jalapeno string cheese.

GonnaBeMrsB:  Grilled steak, asparagus and sliced sweet potatoes. It is a grilling and chilling kind of night. We even have plans to do a fire pit and uncork a bottle or two of wine afterwards (my mom’s in town).

Spaghetti Squash Lasagna! We make it with extra lean ground beef meat sauce, dry cottage cheese, and cheddar. I’d love to add in some spinach, but I think my husband would go on a hunger strike over it… I swear he’s 5 years old sometimes!

My husband has a work BBQ, so I am making what we have in the house. A baked potato with an egg and spinach. Hah!

We’re having maple glazed salmon, purple beans, sauteed swiss chard, and mashed sweet potatoes. We have a dance lesson tonight so this is our go-to quick meal.

I’ve been baking salmon lately as well because its healthier and makes the dish even easier.

a swiss chard, white bean, tomato and sausage creation with gnocchi and plenty of cheese! leftovers from yesterday

the other night i made red thai curry turkey-zucchini meatballs which was fun and different. anything with red curry and coconut milk is a win in my book

also our favorite summer go-to dish is lemon herb chicken skewers. no real recipe, just cube the chciken and marinate in olive oil, lemon juice/zest, fresh garlic, salt, whatever fresh herb you can get your hands on and maybe some dijon mustard. then pile them onto skewers and grill. so much tastier than a whole chicken breast 🙂

GonnaBeMrsB:  OH no i forgot to take something out!! ill prob make smoked salmon chowder (since i have canned smoked salmon i made a few weeks ago) with potatoes, zuchinni, onion, pepper plus its soooooo rainy here that when DH comes back from fishing tonight. but ill have to pick up some bread.
