Stir fry is always great :) Use a prebagged frozen mix of veggies to make it easy, and brown rice.

Chicken breasts stuffed with spinach, lowfat/fat free ricotta and an herb of your choice/salt/pepper is awesome. You can even use a little bit of marinara over the top for added flavor!

Kashi pizza is amazing, btw. I know it's frozen, but cook it on the oven rack and it is TASTY! I'm talking the whole wheat thin crust one... its low in calories for a pizza, and roasted veggie is the best I've had!

Try an omelette for dinner with ff cheese and one slice of the 30 cal cooked ham from oscar mayer!

I have some pretty healthy recipes on my blog: http://sociallysb.wordpress.com The butternut squash soup one I posted today is only about 150-200 cals per cup, perfect for a lunch or light dinner! (It depends on if you add a little butter--It doesn't add anything to the flavor--or if you use fat free sour cream).

Another idea: fish tacos! so great with tilapia. there are several different recipes floating around, find one that suits your tastes best!

    Good luck with the dieting!

Try a Fritatta: You can use anything - veggies and meat - make sure everything is cooked and then use eggs, (egg whites or egg beaters to cut more fat,) and pour over your ingredients in the skillet. Leave on the burner until edges come free then put in the oven on Broil for a little while. It's super healthy and low carb! Much more flavorful than salad :)

I have been looking at the weight watchers website for some recipe ideas. I am actually not following weight watchers, but they seem to have some great healthy recipe ideas. http://www.weightwatchers.com/food/index.aspx

Also, here is a recipe that I have been making for awhile. FI and I love it, and it's so yummy! We usually just buy some whole grain bread to eat with it. We have never made the olive oil toast like the recipe indicates.

    Roasted Carrot and Parsnip Soup:

    Serves 4 Hands-On Time: 15m Total Time: 1hr 00m

Ingredients

    • 1 pound carrots, peeled and cut into 1/2-inch rounds
    • 1/2 pound parsnips, peeled and cut into 1/2-inch rounds
    • 1 yellow onion, quartered
    • 5 tablespoons olive oil
    • kosher salt and pepper
    • 1/2 baguette, cut into 16 thin slices

Directions

    1. Heat oven to 400° F.
    2. In a large roasting pan, combine the carrots, parsnips, onion, 3 tablespoons of the oil, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Spread the vegetables in an even layer and roast, stirring occasionally, until tender and golden brown, about 45 minutes.
    3. Meanwhile, arrange the bread slices on a baking sheet and brush with the remaining oil. During the last 10 minutes of roasting time, toast the slices until crisp.
    4. Transfer the vegetables to a blender and purée with 3 cups water, adding more water if necessary, 1/4 cup at a time, until smooth. Rewarm in a pot over medium-low heat, if necessary. Divide among individual bowls and serve with the olive oil toast.

Try Ellie Kreiger's recipes on Food Network's website. Her Three Bean and Beef Chili is amazing! (I made it for Halloween and I'm eating leftovers right now!)

My favorite right now is super simple:

3 cup lettuce (i use Romain, but anything would work. Spinage is better if you like it, since its full of vitamins and minerals!), cumbers, tomatoes, mushrooms. Pile it all in a bowl, slide a just out of the broiler hot piece of fish 4-6oz in size on top and then spray with lemon juice. Very tasty!

Also, you can make your own low-cal soup easily at home. Start with onions, garlic, and a little olive oil in the bottom of a stock pot or very deep pan. Fry until they are translucent. Throw in carrots, celery, mushrooms. Fry for a little while (until everything is warm and coated lightly with olive oil.) Dump in a variety of tasty veggies- turnips, parsnips, rutabegas, potatoes, yams/sweet potatoes, etc. As soon as everything is in the pot, add enough water to cover everything. At this point you might want to also add things like salt (we use kosher cause we like the bigger salt grains), pepper, basil or other spices. Also, you can add a little more olive oil if you like. Cook on medium until everything is tender (usually 15-30 minutes, depending on the size of the chunks of veggies you put in it). This is a good, hearty, tasty soup!

We make a lot of lettuce wraps. My favorite is our Asian style and Mexican style.

Asian style - we cook cubed chicken in a little oil and season with garlic and Bragg's Liquid Aminos (you can find this at a lot of supermarkets or health food stores -it tastes a lot like soy sauce but w.o the salt). Then we dics cucumbers and season them with rice wine vinegar and a little stevia (you can use any sweetener). We combine the chicken and cucumbers in a big leaf of iceberg lettuce. Yum!

We do the Mexican style with ground beef (seasoned with chili, cumin and garlic), and grilled red peppers and onions, cheese and salsa.

Stir fry with tofu, mushrooms, sundried tomatoes, asparagus, garlic, and whatever else you feel like throwing in is wonderful.

Oh, and just a little snack, but FI's grandmother taught me this and I love it! If you feel like munching, you can cut up a cucumber and dip the pieces in hummus. She makes black bean hummus that is to die for, and the cucumber really gives a nice crunch, so you don't feel guilty for snacking on crackers or bread.
