    Bees-

I need some inspiration! I'm in charge of dessert for 12-ish people on Sunday. What should I make?

    Thanks!

I'm making my peanut butter brownies for a cookout tomorrow. Buy a box of brownie mix. (I usually use the Ghiradelli dark chocolate stuff.) Buy 12-14 Reese's peanut butter cups. (In the aisle with the big bags of candy, I buy one bag, so however many that has in it.) Prepare the brownie mix as directed and pour half of it into the brownie pan. Place the peanut butter cups on top. Pour the rest of the mix over the PB cups. Bake per the box's instructions. Let cool. Cut into 12-16 pieces, and pretend like you spent hours slaving away.

I've made this a number of times, and absolutely *no one* has realized that it's brownie instant mix with Reese's PB cups in the middle. They always get devoured right away. Oh, and they're especially good if you manage to time the slicing just perfectly and serve them when they're still a little warm.

Both of those sound great! @redherring- my hubby can't eat peanut butter, but I'm wondering if a similar recipe with something likes Andes mints would be good?

Strawberry Shortcake Triffle!!!  I make this all the time to bring to summer type cookouts.  It looks so impressive but it's a breeze to make and everyone always loves it.

Mix strawberries and sugar like you would for regular strawberry shortcake

Put a layer of angel-food cake pieces on the bottom of the dish, followed by the strawberry mix, then cool-whip.  Continue layering until full and garnish the top!

These are delicious.  Even better if you drizzle white chocolate or some other flavor over them then refrigerate them.

@JeniRae: I could definitely see trying that recipe with Andes mints. Actually, I'm really curious now! I might end up making both for tomorrow's BBQ and see which one disappears faster :)

I would go with something light and summery, like lemon bars or a trifle. It is the last weekend of summer after all (well, technically it isn't but it is the last weekend people celebrate as summer :p)

ohhh if its only 12 people.... my cousin makes these cute little desserts... they are in those buckets (like you get at some restuarants for kids food and whatnot) and it is oreos, chocolate pudding, vanilla pudding, whipped cream, (all layered 2 times) and then more oreos crumbled on top and she puts a little flower (fake) in it and its like a potted plant! soooo cute!

@babyboo- we had a 30* temperature drop in the last two days (94 to 64) so it definitely feels like fall this weekend! lol

My FI loves Chocolate Chip Brownies. Just buy the boxed brownie mix and mix as directed, buy chocolate chip cookie mix and mix as directed. Place the brownie mix in the pan first and put random drop of cookie mix throughout.

I make them in a cake pan so I call it my chocolate chip brownie cake!

Cookie Salad is simple and inexpensive, and very light for summer. I've never personally had any leftovers when fixing this.

1 large pkg vanilla pudding mix

    2 cups buttermilk

1 large (20oz) can crushed pineapple, drained

    1 (8oz) tub Cool Whip

1 pkg chocolate-striped shortbread cookies, crushed

Crush entire package of cookies in a large ziploc bag with a rolling pin. Set aside.

Combine the pudding mix and buttermilk in *large* mixing bowl (the biggest you are able to find). Fold in the pineapple and Cool Whip. Fold in the cookie crumbs. Garnish with extra cookie crumbs or a whole cookie or two (as desired). Refrigerate overnight.

Serves 12-20 depending on the serving size,
