stir fry!
i just mix 1/4 c. soy sauce with 1 tbsp brown sugar and a little bit of garlic and sautee 2 chicken breats (cut up) and whatever veggies I have on hand. Serve it over rice (and for the hubs, another large dash of soy sauce) it's his absolute favorite!
Here are my hubby's favorites:
pasta casserole, my lasagne, grilled pizzas, garlic lime chicken, chicken parmagiana, oven fries and cheesy turkey burgers, bruschetta, garlic chicken bite salad and chicken quesadillas.
Phew, that's a lot. I do A LOT of cooking (pretty much every night-we try not to eat out) and these are my go-to simple recipes. Let me know if you'd like some of the recipes.
Garlic lime chicken sounds amazing! I would love that recipe. We eat a lot of chicken, but lemon pepper is all we ever do to it. How do you do your chicken quesadillas? That sounds yummy!
I have alot of different things I love to make since I like cooking :) Here are some: steak with blue cheese butter, steak saltimbocca, carne asada and/or pollo asada tacos, chicken parmigiana, garlic chicken fried rice and chicken with boursin and proscuitto. We also make homemade pizzas on the grill with a pizza stone so we can do some really creative pizza (boursin cheese, tomato sauce and pepperoni!!!) Let me know if you want any of the recipes :)
My fiance's favorite thing that I make for him is steak fajita salad. It's very easy:
Ingredients:
Spinach or arugula, peppers, onions, garlic, limes (2 or 3), olive oil, steak, cherry tomatoes, avocado, and some shredded cheddar cheese and/or sour cream if you want.
-Saute the peppers and onions to the doneness that you like
-Mix a couple of cloves of finely chopped garlic, lime juice of two or three limes, olive oil, and salt and pepper in a small bowl and let it chill out there.
-Cook your steak to the doneness that you like.
-Toss the greens with the olive oil/lime/garlic dressing
-Put the greens on plates, slice the steak and put it on top. Put the peppers and onions on top. Add cherry tomatoes, avocado, and cheese/sour cream if you want.

The chicken quesadillas we've use a griddle pan, indoor grill (george foremann), outdoor grill and a skillet. All have produced great results. If you use something that doesn't fold over on itself panini-press style, than you need to have something heavy to weight the quesadilla down in the beginning just until the tortilla warms and cheese melts. Let me know if you guys want more, we cook a ton so I have a bunch of quick and easy recipes.
My man loves chicken gyros!
--Cook chicken breasts with garlic pepper and lots of oregano. Set aside.
--Butter and toast whole-wheat pitas.
--Make yogurt sauce: Blend chopped/peeled/drained cucumber with fresh garlic and plain non fat yogurt.
--Assemble gyro: add cooked chicken, feta cheese, yogurt sauce, and spinach.
Messy but so good, and FH LOVES them!
@naangel55-- the steak with blue cheese butter, how do you do the blue cheese butter, that sounds really good. and the chicken with boursin and proscuitto sounds amazing! chicken is kind our compromise since he prefers red meat and i usually eat no meat lol. not that i'm vegetarian, i'm just not much of a meat eater.
@hotchildinthecity-- thank you for the steak fajita recipe! he loves tacos and fajitas and stuff like that but i've never quite figured out how to make good ones, lol. but this sounds like a really easy and delicious recipe!
@stacy marie-- gyros! awesome! i had one at the state fair a couple of years ago and it was really good but i never even thought about trying to make them.
thank you all so much! i'm not very creative in the kitchen and i got the feeling he was getting tired of spaghetti, hamburgers, lemon pepper chicken, and frozen pizzas lol

@akennedy01 - The blue cheese butter is very simple (and if you like garlic, I throw that in too). I get a container of crumbled blue cheese and mix about 3/4 of it (more or less depending on how much you like blue cheese) and about 3/4-1 stick of butter. I also chop up about 1-2 cloves of garlic and put that in raw. I suggest keeping the butter out of the fridge for a bit so it softens, its easier to mix that way. Mix everything together in a bowl and mash everything down. I put the steak on the stovetop in a pan and spoon the blue cheese butter mixture over it and let it simmer for a couple minutes uncovered. Once its melted a bit, I put it on the plates. Youll get some nice butter mixture on the bottom of the pan, scrape that up too and put it on the plate, (it might look a little oily but its actually one of the best parts :)

You've now made me want to have steak with blue cheese butter for dinner. But Im making steak tomorrow for dinner (with fontina cheese, proscuitto and red wine reduction). What to do now?!? :)
My hubby brags that he married a "real cook" and truth be told, I have cooking all the family meals since I have been 11 years old. His favorites include: chicken or steak fajitas, deer beer chili, white pizza, Golden Mushroom Pork Chops, Louisanna crab cakes, cream of crab soup, and "Crabby Pasta".
On Sundays I usually make a huge brunch and he loves my biscuits, cornbread (the secret is to pour the batter into a hot oiled cast iron skillet before baking) and batter-dipped catfish. Oh and he loves my French bread and cinnamon swirl bread too!
@bluespurrs - Whats Crabby Pasta? It sounds good and like something I might like (but have to make when the DH isnt home cause he doesnt like fish) :)
I usually get the most compliments from my lasagna, my meatloaf (yes, we love meatloaf here) and my grilled ham and cheese sandwiches! He is very particular about what he eats, and he's a diabetic, so we eat a lot of grilled chicken and green beans!
We love these:
Inside Out Bacon Cheeseburgers with Grilled Green Onion Mayo - Probably DH's favorite thing I make. He's a burger kind of guy, for sure, and these have a little something "extra" to them. The mayo is deeee-licious.
Shrimp with Linguine in Pesto Cream Sauce - I cut the Essence in half (for less heat) and use half-and-half instead of cream to make it a little less heavy. I use the following recipe for the pesto itself: Pesto alla Genovese

I just made a VERY yummy chicken parm (and only 410 cals a serving) that FI loves. Its adapted from Ellie Krieger's recipe on Food Network.
I think we are gonna grill up some steaks this week and make my dad's bourbon steak sauce that FI loves soo much!
