We used Lynn Katey - she isn't "young" per se, but she's definitely lively and fun. She made our ceremony memorable and lively. We are really REALLY happy we used her :) Hope that helps!
I would be able to recommend someone, she is religious, but not uber..and not young either...dang it...

We're using Brent Shephard (in 12 days!) and so far he's been great. I'll letcha know once he officiates.

I'm also on the hunt for a relatively non-religious officiant. FI is religious (but not very) and I am an atheist so we'd want a middle-of-the-road, 'spiritual' but not religious per se ceremony. Any help would be great, I'm approaching the 5 month mark and we've already interviewed and rejected/had fall through, 5 different officiants. eek!!
@enjoyyourrabbit: Have you met Ann Campbell? She can put as much or as little religion as you want in the ceremony, she's very open to ideas, and she's an absolute gem. Sweet older British lady with a twinkle in her eye and a quick wit, and one of the nicest human beings I have ever had the pleasure of meeting. During cocktail hour we had our guests coming up to us left and right saying how much they loved her!

I've just booked Roxanne from marryus.ca She goes as religious or non-religious as you like. We're goin semi religious.
She's really super nice and just keeps saying you can have whatever you want. So far I really like her.
