Did you ever find a good one?  I have been looking at caterers for my wedding (probably to be held in Westchester, but haven’t officially booked a venue yet).  I really am impressed with Verite Catering (they’re full-service and vegan) but they’re a little on the pricey side.  There’s also Certified Orgasmic (the same people who do the Cinnamon Snail vegan food truck) – they also do full service catering.  I also ran across the website of “Natural Delights,” but I’m a little skeptical because I can’t find any reviews of them online… http://www.naturaldelights.biz/sample_menus

I’ve also looked at the catering menus at NYC restaurants like Cafe Blossom and Red Bamboo, which seem great, but it seems like life would be a lot easier with a full service caterer.

A lot of non-vegetarian caterers I’ve spoken to are flexible and are willing to do a vegetarian menu for you… but I’m nervous about ending up with either just vegetable plates and penne a la vodka, or else seitan prepared badly by someone who’s never cooked with it before!  This bride offered a positive review of a vegetarian wedding at the Swan Club: http://www.liweddings.com/chat/topic-642899-1.html
