If you have nothing in the house and you get a referal for the floor company I would say its okay to trust them with a key. There will be nothing for them to steal and when you move in just change the locks as you would do anyways.

My neighbor refinishes hardwood floors for a living and he re-did ours a while back… what a headache!  Definitely have then done before you move in.  Give the contractors the keys, and then replaces the locks afterwards.  I mean, replacing the locks is probably something you’re going to do anyways once you move in… do you know who currently has copies of the keys?
