POUGHKEEPSIE!!!! I love the 'kips and have dined out there many a time but my first instinct for rehearsal dinners was actually to drive north.
Depending on what mood you're going for and if it's possible to drive, there are a couple of great options in Hyde Park.
A low key favorite with great atmosphere is the Everyready Diner - hands down the best diner I've ever been to - we went weekly in college. If you don't do this for rehearsal it might be great for a next day brunch. http://www.theevereadydiner.com/
The local Hyde Park Brewery is also spectacular and has capacity for a 60 person crowd. They make their own beer and have fantastic pub entrees. http://www.hydeparkbrewing.moonfruit.com/
A little further away in gorgeous scenic Rhinebeck is Terrapin restaurant - it is elegant and super delicious. Very refined if the diner scene isn't your cup of tea. http://www.terrapinrestaurant.com/
In Poughkeepsie itself I think you're a little bit more limited but for fun, I've always liked Mill House Panda which is right downtown <span class="a">(www.millhousepanda.com) and there's also River Station which is on the river and probably has capacity (http://www.riverstationrest.com/ )
One last thing as it becomes blatantly obvious that I'm obsessed with Poughkeepsie, if you - and your girls be they aunts or moms or bridesmaids - are in town on Thursday or Friday (or any weekday, sadly not the weekends), an excellent treat is the Apple Pie Bakery at the CIA. Unlike other CIA restaurants this does not require reservations and it has great salads and quiches and baked goods extraordinaire. It is timeless and it's the CIA so it's amazing. http://www.ciachef.edu/restaurants/apbc/

Wow!! thanks for all of the suggestions! I'm definetly going to check out a few of them... and if not for a rehearsal dinner - for other times too!! My parents currently live near Poughkeepsie (which is why we're getting married there) but I grew up in Orange County so I'm not as familiar with the options around there. Thank you so much!! I will be sure to let you know what we end up doing!
We had our rehearsal dinner at the Highlands Country Club. We had a great BBQ-style spread outside on their lawn. The staff was fantastic and the food was great. Not sure how close that is to where you are - it is in Garrison, about 10-15 minutes from Fishkill. happy to send pics if you are interested
I say CIA! They have great options - they only problem is they only have priviate rooms that accomodate up to 15. So as long as you don't mind not having your own room it's a great option.
I'd also check out Amici's or Riverstation, they're right down the street from the Grandview, and Riverstation also has a great view of the river from their outdoor dining deck. Cosimo's also has awesome food too though.
The easiest thing to do would probably be to go to Shadows because you wont have to worry about finding parking or anything. Just walk right next door. The food is always awesome there too! Especially the apps and margaritas ;)
Any good suggestions of reheasal dinner places near Poughkeepsie??
My wedding is at the Grandview in Poughkeepsie - so far we've looked at Shadows (next door), the Grand Hotel, and Cosimo's Trattoria.
Any other ideas that could sit at least 60 people?
