I would put the return name/address for whoever is in charge of the RSVPs. Since we live together, I used just our first names on the return addresses.

Could you just do both first names and omit the last name all together?
I would say that since they're being sent out before the wedding, and your name doesn't change until after the wedding, use your maiden name.
I won't be using my SO's last name until it is actually my name.
I am planning on taking his name. I like the idea of just using the first names. I think that is a really good idea
FI and I live together, so I put both of our last names on the return address, e.g.
Smith & Jones
123 Weddingbee Lane
Anytown, USA 12345
