You could do heavy appetizers. IMO serving dinner that late would be a waste because I know I would be eatting dinner before (even for a 6:30 ceremony) I like to eat dinner around 5

Definitely do heavy appetizers and finger-food type desserts — the kind of “mingly” food you would have at a ritzy New Year’s Eve party! Be sure to indicate that it is a cocktail reception on your invitations, in case anyone expects dinner.

That sounds perfect!  It’s a win/win!!  Because you don’t have to, and IMO it would be a waste to serve a full dinner @ 9:00, and your budget shouldn’t suffer- because everyone can attend.  (Although sometimes hor d’uerves do get expensive too.  You could even do just a dessert buffet 🙂
