Or, just throw them in the freezer with the peel on. You can bake when you’re in the mood, by letting them thaw, then just squishing out the fruit.

I’m in a similar situation but I have no oven – just a stove and a microwave. Any ideas what I can do with my bananas? (Pancakes, maybe?)

@enzoani4sale: not much of a baker here…. I take super ripe bananas and peel them and freeze them. Use one banana at a time cut into chunks, for smoothies, instead of ice cubes = non watered down yumminess!

I don’t bake a lot but when I have ripe bananas I put them in the freezer to make smoothies!
