Grilled asparagus and mashed red potatoes

Jasmine rice pilaf and sauteed zucchini, squash, and onion

mixed vegetable casserole and fresh baked dinner rolls or crescent rolls


Ummm… yeah, a veggie and a carb (of any variety) should go nicely 🙂

Roast potatoes & parsnips. Peas & courgettes, sweede & carrot mash, sage & onion stuffing covered in gravy. Yum!

I would agree with asparagus, but it’s out of season.

I love fresh green beans sauteed in minced garlic and olive oil, and maybe some cheesy mashed potatoes? If I could ever drag the recipe out of FIL, I’d go with his million-calorie ones, haha.

Sautéed veggies (I love zucchini, squash, mushroom and onion) with some sort of potato. Mashed, seasoned wedges, etc.
