You're saying people will select two entrees? I don't think that will happen, as long as you clearly differentiate the different selections. We will be including out vegetarian option on the response card like:
____ Filet Mignon
____ Stuffed Chicken Breast
____ Baked Stuffed Portobello Mushroom Caps
I think most people know to only select one. And if they mess up, you could call and confirm!
Yes, I should have included the wording initially, The draft I have is "Please initial your entree selection" and then I will have images of a cow, chicken and carrot....
@gailm: that was exactly what we did: little symbols of a carrot, fish, and cow-- zero confusion out of over 200 people. your caterer sounds paranoid!
I sort of know who amongst my friends is a vegetarian and who isn't and will perhaps ask the rest before sending the invites. Job done lol
If someone picks the cow and the carrot it's safe to say they aren't a vegetarian, so just write them down for the steak.
I guess I can see what your caterer is talking about. It is a little paranoid. :)
If you can't do pictures, maybe if you worded abbie's example like this?
____ Beef Entree: Filet Mignon
____ Chicken Entree: Stuffed Chicken Breast
____ Vegetarian Entree: Baked Stuffed Portobello Mushroom Caps
If the word "vegetarian" is on there somewhere, they'll get it.
I would take what your caterer is saying with a grain of salt, I don't think you'll have too much trouble with your guests getting confused. ;)

There was absolutely no confusion with mine.

____ hard carve rib eye
____ grilled veggie stack & calypso rice
I was surprised we had so many takers on the vegetarian (vegan, actually) entree. I thought it would be just me and my older brother (a vegan).

I have been a vegetarian for a number of years (just recently started eating meat) and I always appreciated seeing a vegetarian option on a response card! Recently my caterer told me not to list a vegetarian option because people will pick the stake and the vegetables - assuming they could get both if the initialed both!
How many of you listed a vegetarian option and got inappropriate responses back! What did you do?
