We got a huge chunk of RSVPs on the day of the deadline and the week following. I'd give them a a few days past the response date and then start calling.
We actually got a "no" rsvp card five days AFTER the wedding. We were just like really? REALLY?!
@misspeanut: Lol, what the heck? Did they not think that you'd noticed their absence?
Do you think that calling folks on Saturday or Sunday is too soon? If they're due Thursday, that'd still allow 2 postal days for those that dropped them in on the day of. Our caterer wants prelim numbers around the 14th or 15th and we're still waiting on over 100 RSVPs :-/ If we call Sunday, they can drop them in the mail Monday yet.
We got a trickle on and after the due date, but nothing substantial. I think I waited about 3 days before I started calling people.
@joy2011: That sounds like a good plan. I think we may pop out some texts/fb messages to our younger friends on Saturday or so, but we'll wait until Monday to call up those that are less tech savvy/more formal and see what they're thinking. That'll give it a few postal days for those that drop them in the mail on the 9th.

Married bees (or those who've passed their RSVP deadline), did you have a lot of *just* on time or late RSVPs? Our deadline is Thursday. I think my weekend looks shot w/ all the folks I have to call, but I'm holding out for a glimmer of hope that lots of pple will send them in in the next 2 days.
