You'd definitely have to beef up the spread - sandwiches, potato salad, a regular salad, rolls, butter, chips, etc. I'd also have a bunch of different appetizer-type foods around (mini quiches are always a big hit, veggie tray with dip, etc). I think once you add a bunch of sides in, you could have a pretty nice spread!
What about adding soup & salad to the mix? Both can be made relatively cheaply, and are a way to boost the fill quotient for your sammies.
I think you can have more filling options, for the same money you would spend on sandwiches.
Huge pans of stuffed shells, meatballs, etc. don't cost too much and can be made ahead of time.
I think that sounds great we are doing the same thing but we are having a late cermony 7:30 so people will have already of had dinner and we will be providing a late lunch. So much easier on the budget
We would be having a pasta salad, potato salad, fresh fruit, chips and salsa and a veggie tray also. This won't be a sit down meal so if they want seconds they can. I didnt think about a soup...that actually sounds good. It will go good since it will be in early October here in the midwest.
Saturday night at 6 is definitely a dinner reception so I'd beef it up. People will be expecting more food. How about adding some pizza/mac n cheese along with the other options people have suggested?

Same story I and my FI are on a tight budget, like a lot of people are these days. I am going towards having just sandwiches with all the fixings and a few sides and fruit and homemade chips and salsa as our food. Of course we are having our cup cake and cake also. My FI on the other hand don't feel that sandwiches are enough. Our reception is on a Saturday starting at 6:00 PM and it isn't like the guests are going to be sitting through our wedding beforehand because we are getting married the Thursday before on 10/11/12 in a private ceremony. Should we look into other options?
