This may be a dumb question…
We’re putting together our catering “wish list” and we want to offer a meat, fish, and veggie option for our guests. We want to do a formal seated dinner. How do we figure out which guests will pick which entrees? Obviously the meat entrees are going to be more expensive than veggie so we want to budget the correct amount.

You can include an option on your RSVP cards where guests will be able to choose their entree. You can simply say give a choice of “beef/fish/ vegetarian” and leave space for each guest to choose their preference. Or you can describe the entrees in detail so people can make a more informed decision.
Then you can create escort carcs for each person to be set at their place at the table with color coding or pictures to illustrate which mea they chose (ex green for veggie, blue for fish, red for meat). That way the caterer knows which meal to bring.
