Could you perhaps have table names? If they don't tell you how many seats are at each table i'm not sure you'll be able to assign a seat for each guest? that's a really difficult question. can you maybe ask what other brides have done in that situation and perhaps they can give you insight?
tricky....
Could you make up escort cards and then add the numbers of the table the day of?
I messaged one bride I've connected with on here, hopefully she'll have a suggestion.
I just don't want to be last minute scrambling to make a seating chart the week of, but right now I'm not seeing many other options!

Our very favorite venue (as of right now) is really unique: they sell vintage furniture and other artifacts (they're a higher end resale shop) and you're allowed to use most of their inventory for your decorations and seating. This is a huge plus to me because I love how unique that will make our wedding, but the problem is while they can guarantee the number of tables and chairs they'll have for you, they can't guarantee how big they'll be.
So what do I do for seating? It's going to be a larger wedding (between 150-190) and so I don't think a free for all is really the way to go, but what's the in between if I don't know how many seats will be at each table?
