I made salmon over the weekend that was delicious.
Salmon fillets
equal parts dijon mustard & honey (I used 9 tbsp of each for 6 fillets)
1/4 cup melted butter (approx)
Panko bread crumbs, finely chopped pecans (mixed together in a bowl)
Mix mustard, honey and melted butter in a bowl. Coat fillets in mixture. Then coat in bread crumb & pecan mixture. Place in glass baking dish. Drizzle any remaining sauce onto fillets and add extra pecans if desired. Bake at 400 for 10-15 mins. Check on the fish to make sure the color is right (light pink) and add extra time if needed.
I'm making this for dinner tonight and am SO excited.
The chicken is currently marinating and the marinade smells and tastes delicous!

But I put the lemon inside the chicken rather than in with the potatoes.
Oh and I currently have a loaf of banana bread baking in the oven and it smells divine!
I have been loving some quinoa recently! Yesterday I made quinoa with fresh basil, tomatoes, a little parm cheese and garlic and then added some chicken and topped it with some balsamic vinegar. Sooo good!
I also like to take quinoa and chicken and add chili paste and some bragg's liquid amino's (fake soy sauce) and make a spicy asian dish. You could add some stir fry veggies too (I don't like vegetables).
@KLloyd1: What does quinoa taste like? Is it kind of like rice? I'm a super weird and texture-anxious eater and I know quinoa is good for you, but I'm nervous to try it. But the way you prepared it w/ garlic and cheese, etc sounds soo good!
@PitBulLover: Def going to remember this one...I don't eat seafood but FI loves all fish, esp. salmon!
@akp0702: It is very similar to rice. My husband isn't a huge rice fan but he LOVES quinoa. It can take on so many different flavors and it isn't mushy. I'm trying to think of a word to describe the texture...it's kinda crisp...really yummy. I know Kroger sells it in the bulk aisle so you could get just a little to try to see if you like it. It cooks in like 10 minutes. Super easy.
@akp0702: It was SO delicious and the potatoes were divine too. I also threw in carrots and shallots into the roasting pan with the potatoes.
Thai Coconut Curry Soup (with chicken). Easy to throw together, CRAZY DELICIOUS, and pretty darn healthy! I brought leftovers to work the next day, and the whole office was asking me what I was eating because it smelled so good. I had to give samples to two of the guys! They loved it too!

It's not really a recipe, but lately I'm loving using Hidden Valley ranch seasoning to flavor meat. It's AMAZING on pork chops and really good on chicken too. In fact, I'm using it on some chicken for dinner tonight! It's probably a lot of sodium, I'd imagine, but it's just so damn good.
@rubyroad10: Hmmm that sounds delicious!! I think I'll make it as soon I can find curry paste without shellfish in it.

Not really a meal but KALE CHIPS! It's super easy and such a yummy snack- I made them 4 times last week. Cut up the Kale, mix with olive oil, apple cider vinegar, and a little salt. Stick it in the oven at 350 for about 20-25 min and you're good to go!
@MrsPinkPeony: I've been wanting to try those as well. I've heard they are good and crispy.
Which reminds me: I've seen recipes for baking chick peas and flavoring them with olive oil and a little garlic salt. Do they really get crispy? Has anyone tried them?

Okay. I love to cook!!! When I'm bored at work sometimes, I'll prowl the food blogs or foodnetwork.com to find new things to try. No recipe scares me. Even though I'm a really, REALLY picky eater, I'll galdly make anything I know FI will like, even if I pick around most of it (usually the veggies or seafood) and only eat parts of it.
So what are you cooking these days (or going to be cooking soon) that you're really excited about. Two nights ago I made my second pot of mexican chicken tortilla soup. FI's FAVORITE soupe is chicken tortilla and has always raved about his moms. He's had high standards but I used Ina Garten's recipe and added some tweaks and....TAH DAH...he said this is his new favorite chicken tortilla soup. Score one for me!!

I add a can of black beans (drained) and about a cup of frozen corn. Also the juice from half a lemon. And as I tend to do with most of my cooking, I increase the garlic by, oh I don't know, twice as mucH? ;) and I don't cook the tortilla strips in mine.
ETA: we top with avocado, monterey jack cheese, and crumbled tortilla chips.
