I’m always looking for recipes that don’t incorporate processed foods. Feel free to share your best recipe below! Here’s mine:
3-5 lb pot roast (whatever cut of beef you prefer)
1 tbsp chopped garlic
1-2 tbsp butter
1/2 cup red wine (or beef broth)
Veggies of choice (I like carrots, celery, potatoes)
Preheat oven to 250 degrees
Season the meat with salt/pepper
Chop the veggies
Heat 1-2 tbsp vegetable oil in large Dutch oven (or other vessel you can transfer to the oven)
When oil is hot, sear the seasoned beef for 5-7 min on each side. Remove and place on plate.
In the same pot, add 1-2 tbsp butter, chopped onion, and garlic. Cook for 10 min, stirring.
Add the remaining veggies, creating a “nest” for the beef. Pour the red wine in the center of the nest
Place the beef on top, cover, and put into the oven for 6 hours, or until meat is fork-tender. I will flip the beef at the halfway point as well.
