These oven baked fajitas are the BOMB.COM! Seriously. I make them almost every week, and eat the leftovers for a couple lunches. I add extra peppers and mushrooms to make it prettier and more filling. FI loves them, and even my picky 2 year old likes them!

@Mrs. Doily:  Haha I’m obsessed with adding to my food/recipe Pinterest boards.  Yes, boards plural … I have one for “Favorite Recipes,” one for “Healthy Recipes,” and one for “Recipes To Try.”

I’ll share one from each board:

This is from my “Favorite Recipes” board.  Arni Youvetsi from Elly Says Opa!  My fiance and I love lamb, and the flavors are so simple but delicious in this one.

This is from my “Healthy Recipes” board.  Drunken noodles from A Taste of Thai.  I changed some things (I added chicken and omitted the green beans, for instance), but it turned out great.  It was pretty easy to make, though the prep work was pretty time consuming (lots of chopping).

@Mrs. Doily:  Do it! I use 3 whole peppers (different colors), an onion, and mushrooms, along with the Rotel it calls for. Really bulks it up. I also leave out the oregano b/c it seems odd to me in fajitas. I hate meals that call for a lot of prep, but as good as this is, I don’t mind taking the extra 5 minutes to chop!

@Mrs. Doily:  Ohh that’s a tough one! There’s so many! However, I have to say my all-time favorite has to be this amazing cobbler recipe. I’ve made it for a few family get togethers now and everyone always says that it’s the absolute best cobbler that they’ve ever had. Whenever I make it for DH and I, I have to double if not triple the recipe because otherwise it doesn’t last long enough!

 

I’ve tried making from scratch, but this route is not only easier, it’s yummier! The strawberry was the best, but I’ve also done blackberry and raspberry which are equally delicious. I’m going to venture to blueberries this weekend since we have roughly 8 freezer bags full of fresh ones from a few weeks ago.  I also add some cinnamon into the mixture to really add a nice flavor. *NOTE* 1 stick of butter=1/2 cup. Not the full cup sticks! Did that once before, oopsie.

I LOVE this thread. I would say pinning recipes is right up there with pinning wedding stuff for me, haha! 

 

I have the biggest sweet tooth ever, and this is one of my favorites – salted caramel chocolate pretzel bark. I seriously cannot stop eating it whenever it’s around!

This potato salad is out of this world! It’s soooo good. I’ve made it three or four times now and I always have a completely empty bowl whether its just for the family, or for a pot luck! 

I don’t use chives (SO doesn’t like them) and I add half a package of dry ranch dressing, and added a bit of the fat from the cooked bacon into the sauce. It’s seriously the best salad I’ve ever had. Ever. And it keeps for four days in the fridge and only gets better as you let it sit (I make it a day and a half in advance most of hte time)
