Who doesn’t love all the fresh veggies and fruits available in summer? I just made some Italian Tomato Salad and I only make it with homegrown tomatoes. So easy and yummy!
Finely chop 1 green pepper and one onion
Add chopped celery or celery seed
Coarsely chop tomatoes, I used 6 today.
Liberally drizzle with good olive oil
Sprinkle well with oregano and a little sea salt and mix.
Let sit in fridge, better the next day.
I eat it heaped on slices of good french or italian bread. So good!

Sounds good! Here’s another… a bit more work, but still easy and always a hit.
Fruit Ambrosia with Creme Anglaise
1/4 cup thawed orange juice concentrate
2 T sugar
1 1/2 cups orange sections (about 3 oranges)
1 1/3 cups sliced bananas (about 2)
1 cup seedless green grapes
1 cup fresh blackberries
1 cup fresh raspberries
1 1/4 cups creme anglaise, chilled
Combine orange juice concentrate and sugar in a meduim bowl; add all fruit, tossing gently. Spoon creme anglaise over the top (or provide seperately, or dish out individual servings of fruit and creme)
1 3/4 cups milk
1 (3inch) piece vanilla bean, split lengthwise
1/3 cup sugar
4 large egg yolks
Pour milk into a medium saucepan. Scrape seeds from the vanilla bean; add seeds and bean to milk. Cook over medium heat 6 minutes (do not boil); discard bean. Remove from heat.
Combine sugar and yolks in a bowl, stirring with a whisk until blended. Gradually add milk mixture to bowl, stirring constantly with a whisk. Return mixture to pan. Cook over medium heat 6 minutes or until mixture evenly coats the back of a spoon, stirring constantly with whisk. Immediately pour mixture into a bowl. Cover and chill mixture (will thicken as cools). Can be stored in the refrigerator for up to 3 days before serving.

Strawberry Pretzel Dessert
I got the recipe from allrecipes.com after having it once at a family reunion..it is the perfect summer treat!
- 2 cups crushed pretzels
- 3/4 cup butter, melted
- 3 tablespoons white sugar
- 1 (8 ounce) package cream cheese, softened
- 1 cup white sugar
- 1 (8 ounce) container frozen whipped topping, thawed
- 2 (3 ounce) packages strawberry flavored gelatin
- 2 cups boiling water
- 2 (10 ounce) packages frozen strawberries
- Preheat oven to 400 degrees F (200 degrees C).
- Stir together crushed pretzels, melted butter and 3 tablespoons sugar; mix well and press mixture into the bottom of a 9×13 inch baking dish.
- Bake 8 to 10 minutes, until set. Set aside to cool.
- In a large mixing bowl cream together cream cheese and 1 cup sugar. Fold in whipped topping. Spread mixture onto cooled crust.
- Dissolve gelatin in boiling water. Stir in still frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer. Refrigerate until set.

I like a nice caprese salad with fresh garden tomatoes and basil, some fresh mozzarella cubes and a simple balsamic vinaigrette. It’s also delicious with black olives and artichoke hearts added. And I also love caprese panini in the summer:tomato slices, basil leaves, fresh mozzarella on a nice ciabatta bread, grilled to perfection.

I’ll be watching this thread. I keep looking for good summertime recipes and then can’t find any that look appealing or easy. I can’t wait til we have a house and i can have a garden and i can finally grow some of my own veggies!
