Recently I experimented with making Spanish rice in a rice cooker. FI loved it, so I tried another one and that was a hit too. Here are my suggestions

Spanish rice
1 c. Rice
2c. Chicken broth
2 T. Chopped onion
1/4 c. Salsa
garlic powder and cumin to taste
place all ingredients in the rice cooker and let it work its magic!

Garlic Herb Rice
1c. Rice
2. Chicken or vegetable broth
4 T. Butter
1T Garlic powder
2T Poultry seasoning.
add all ingredients to rice cooker and fluff when done.

MrsGatito:  We do various kinds of things to rice….

-mix in  your fave chinese sauces….

-my fave is to mix in some onion soup mix and some cream of chicken soup….its pretty good….

-cheesey rice…

-all of these are pretty simple just make rice, mix in and warm till warmed through (or in cheese case, cheese is all melty and gooey)….

MrsGatito:  I make my own simple Jambalaya rice and serve it with chicken or shrimp.

Chop up 1/2 onion, 1/2 green bell pepper, and 1-2 stalks of celery.  Sautee in a frying pan with 2 tablespoons of butter.

Add cooked rice to the sauteed vegetables.  I cheat and buy Boil in a Bag brown rice (you can use white if you prefer) but you can also make the dry stuff in a rice cooker.

Add 1/2-1 full 14.5 oz can of diced tomatoes (more or less as you prefer) to the rice and veggies.

Add Tony Chacker’s Cajun Seasoning and a few shakes of Tobasco to taste and serve.

Can add cooked chicken or shrimp to the rice or serve over the rice.

I sometimes make rice and then add in a can of chick peas with some juice, tons of garlic, canned corn, onion, some diced peppers, and kikoman soy sauce (this brand specifically…doesnt taste like fried rice)…. I add that into a non stick pan once the rice has already been cooked and its pretty tasty.

mexican rice

Brown up some white rice in a little bit of oil in a pan. Add in some chopped up onion. Stir in 1 small can of tomato sauce and two cans of water (use the empty tomato can), stir it up and season using garlic, salt and pepper and . I have no measurements because I do this all by memory lol and by taste. I somehow nail it now every time. It took me FOREVER. to get it right. I learned from my grandmother and had to just keep trying and trying until I got it all right. Im making some tonight. Ill measure out the rice so I can come back to this thread with exact measurements. I never thought to write this stuff down lol but it might be wise considering people are CONSTANTLY asking me how I make my mexican rice.
