Hello nesting bees! This is my first post in the Nesting boards! I’ve been a newlywed over a year, so thought it might be time to move beyond the wedding boards.
So…I want to see some of your weekly menus/food plans! Even a day or two – I always need new ideas! Here’s mine for this week:
Mon – Hawaiian pulled pork pizza with spinach salad
[Tue – Going out to use a Groupon for a Korean restaurant]
Wed – Mac & Cheese stuffed green peppers (using orechiette for the mac)
Thu – Grilled chicken with corn pudding
Fri – White chilli (using ground turkey, cannellini beans)
Sat – Ginger fish stir fry (edamame, mushrooms, carrots) with rice
Sun – Vermicelli chicken noodle soup (without actual chicken)
Mon – Haven’t decided yet!

Last night we had veal cutlets with pasta and veggies
Tonight we’re having weiner schnitzel with spaetzle (We’ve never made either before, let’s see how it goes! We’re making it with pork and not veal since we had veal last night)
Tuesday – Spiced eggplant with grain salad (recipe: http://www.bonappetit.com/recipe/spiced-eggplant-with-bulgur-salad except I’ll do couscous instead of bulgur).
Wednesday – steak pizzaiola (I’ve never made this before either, but it comes from a cookbook I trust)
Thursday – curry squash with rice pilaf
Friday – meatball subs with tater tots
Saturday – go out?

Wow, I wish we were the type to make menu plans for each week. My FI doesnt get off work until 10pm, so I dont usually cook during the week. And when I do cook, we usually have leftovers for a couple of days.
The meal plan that my FI and I follow has us eat the same thing every day for a week and allows one night a week to eat out. I thought I would hate it but I love it! I never have to think about what to make for meals! Here’s ours for this week:
Breakfast: Egg & turkey bacon on a whole wheat english muffin
Lunch: Strawberry-Banana smoothie
Snack: String cheese
Dinner: Quinoa taco salad
The taco salad is SO good. If anyone wants the recipe I’m more than happy to share!

Capellini with roasted cauliflower and a poached egg, shaved carrot salad with sprouts and lentils
Bean tacos with guacamole and chipotle roasted sweet potatoes
Whatever DH makes!
Moroccan spiced stuffed squash
Homemade pizza or go out!
My husband cooks on the weekends!

@LovelyLee: Wait, so you will eat quinoa taco salad EVERY SINGLE NIGHT this week?
We totally eat the same thing over and over every day for breakfast and lunch and snacks. But dinner, I don’t think I could do that!
I’m still getting over my morning sickness and can only stomach meat if it’s disguised. Except I’m used to cooking pretty lean, baked chicken and quinoa with broccoli etc… If anyone has any ideas let me know : I’m at a loss!

@arielmerms: Oh I’ve done spaetzle before, here’s my tip – use a slotted spoon (one with big slots) and put the dough on it, push it down and let pieces drip into the water. I was surpised with how easy it was!
@LovelyLee: Can you send me the recipe? Thanks!

I never plan for the whole week. I wish we did! Tonight is salmon with roasted squash and green beans.
@MsJ2theZ: Yup! Usually on the weekends we’re a little more lenient about what we eat. Mostly because we’ve run out of food and don’t go grocery shopping until Sunday. But we’ll eat the same thing every day for at least 5 days (usually eat out Fridays or Saturdays for dinner) and then switch menus for another week.

@mrscash: Thanks! The recipe I have says to use a colander, but I’ll try with the spoon too and see which works out better.

@LovelyLee: Wow that’s noble – I can’t eat the same or even too similar breakfast or lunch 2 days in a row, much less 5 days in a row for all 3 meals! Do you make one big batch one day in the week and then just keep reheating it? Do you ever consider just doing the quinoa and then adding different kinds of proteins/veggies to mix it up each night? Like maybe shrimp on it one night, chicken another, some fish, etc?
