why dont you buy a sample and try it out first? im interested in this also!
I did this! I have an HP printer too....the ink never dries. I had to heat emboss it, but it turned out cool. here's my post about it

Some other ppl suggested using a fixative spray too, but I don't know if anyone tried it.
Also you can buy samples of papers and pocketfolds at www.paperandmore.com for like 50 cents. I'm glad I did that because some of them looked totally different than the way they looked online. And you can try it out before you commit to buying a whole bunch of paper.
If you are going to use a spray, don't get workable fixative. That's an art product you can use to draw over or on top of. I'd use a matte one - made by Krylon I think.
But I would order a sample first if you are buying online. I ordered samples of my outer envelopes and it was a good thing, I ended up liking a totally different color.

I'm about to buy all the paper for my DIY invitations. I really love the shimmer paper but have heard its not good to print on. Has anyone had this experience? I have an HP photo printer. HELP PLEASE!!
