Hey there bees,
My fiance and I just finalized our dinner menu and I’d love to see what you’re planning to serve. Our wedding is a destination in Puerta Vallarta, so our menu is all Mexican fare.
- Homemade tortilla chips with guac/salsa
- Selection of empanadas
- Signature margaritas
- Choice of mexican quinoa salad with honey lime dressing
- or mexican chopped salad with creamy cilantro dressing
- Choice of lobster quesadilla with peach salsa
- or chorizo quesadilla with mango pomegranate guacamole
- (meat can be excluded for vegetarians)
Main Course: (all served with black or pinto beans and traditional mexican rice)
- Carne Asada tacos with chipotle lime marinade.
- Pork Belly enchilada with creamy tomatillo ranch dressing
- Roasted vegetable fajitas with garlic avocado spread.
- Wedding cake TBD
- Selection of dessert wines
- Horchata blanca
- Goat cheese flan with figs and hazlenuts
- Selection of cookies.

Buffalo mozzarella with cherry tomatoes
Balderson apple wood cheddar dill soup with lobster knuckles
Choice of spaghetti squash with tomato consume or prawn mussel and lobster flash or beef rib eye
Ginger creme brule
Mmmm … We will also have a late night buffet.

erw4338: Your menu sounds amazing and I love all of your choices! I’m seriously getting hungry from reading it. Sign me up for some pork belly enchiladas!
We are doing food stations and I’m really excited about that, but I’m a little bummed we’re not doing a more exotic menu. FI and I are total foodies, but we’d be more upset if guests didn’t eat something because they didn’t feel comfortable with the food.
We haven’t finalized our hors d’oeuvres menu yet, but we’ll most likely be serving:
- Goi Cuon (Vietnamese spring roll) with peanut dipping sauce
- Steak Tataki
- Spinach & Baby Artichoke Wonton Flower
Food Station #1 – Carving Station:
- Roasted Tenderloin of Beef
- Truffle Whipped Yukon Potatoes
- Braised Balsamic Onion Relish
- Soft Michette Rolls
- Sauteed Vegetables
Food Station #2 – Sushi Station:
- Assorted Sushi Rolls
- Wasabi, Pickled Ginger, and Soy Sauce
Food Station #3 – Pasta Station (also serves as our vegetarian option):
- Pastas – Whole Wheat Penne, Three Cheese Tortellini, and Orcchiette
- Meats – Diced Grilled Chicken, Fennel Pepper Sausage, and Shrimp
- Veggies – English Peas, Mixed Peppers, Button Mushrooms, and Sundried Tomatoes
- Sauces – Pesto Parmesan, Roasted Garlic Cream, Rustic Marinara
- Focaccia and Garlic Bread
- Wedding Cake – 3 tiers but we haven’t chosen the flavors yet
- Coffee and Tea service
- If the budget allows it, I’d love to have a mini donut machine too

We’re having canapes – chef’s selection of hot and cold canapes.<br />Main (alternate drop):<br />Char-grilled beef mignon, served with a red wine jus and seasonal vegetables.<br />Pan-fried crispy skin chicken breast, with roasted baby beats, sweet onion jus, served on a rocket salad.<br />Dessert:<br />Soft pavalova, with liquor mascarpone and berry compote.<br />Rich chocolate pudding, with a wild berry compote.<br />Cake (served with fresh tea and coffee):<br />Caramel mud cake.<br />White chocolate and raspberry mud cake.

Main – Roasted Rump of Arun-Vale Lamb, Herb Mash, Roasted Carrots and Parsnips, Sprouting Broccoli and Real Lamb Gravy
Desert – Winter Pimms Jelly Cup with Blackberries and Red Currants. Topped with Vanilla and Cardamon Cream. Orange Shortbreads
We’re having canapes too, but these are yet to be chosen!
We’re having a country/rustic themed wedding at an old mill in the New Forest in the UK (google it, it’s a stunning place!)

We are renting out a villa for the weekend. It’s called Villa Celeste. http://villacelestevallarta.com
We are having a very small amount of people coming, so it works perfectly for our size. The one issue we had originally with the venue was wondering who was going to cater. However, my friend who is a chef has graciously agreed to cater the wedding for us. It’s right on the beach, so we are having the ceremony there. We will then be holding a small party for us on the patio of the villa. I personally love Puerta Vallarta, and it’s relatively close to us (we live in L.A)

They have some great reception sites, and they cater as well. (not sure what the menu is) if not I’m sure you could always find a local restaurant/caterer to give you mexican fare.

Mine are not as awesome and elaborate but we are having a veggie tray, fruit tray, cracker chese tray for cocktail hour
For dinner we have a buffet
Stuffed Pork loin
Lemon Herb chicken
Garlic Rice Pilaf
Bacon Whipped Potatoes
Freshed Baked Bread
For dessert we are having red velvet cupcakes with cream cheese frosting 😛 😛 😛

We have decided to do a 3 course meal, thought 4 course might be far too much. The 4th course would have been soup. Our venue gave us choices under each course and this is what we have selected and we have to find out what they will do with those whom have dietary restrictions.
1st Course: Traditional Caesar salad, Herb Croutons, Freshly Grated Parmesan Cheese & Lemon
2nd Course: Char Grilled Beef striploin, roasted Potatoes, Peppercorn sauce
3rd Course: Cheese Cake sampler – strawberry, espresso & Mango
Than later in the night there will be a 4 tiered wedding cake with 4 different flavours (Lemon, Red Velvet, Marble and Chocolate…..this might change after we speak with the venue on Monday at our tasting when I ask a few questions) and a late night Taco Bar!
