Just register for the amount you want.  Most people go for 12 or 16 (some less if they never plan to have large dinner parties).  Someone will likely buy you all or half of them, or a few people will combine money to buy all of them.

@FutureMrsT1221:  I know a lot of stores have a guide for the number of gifts in a certain dollar value you should register for based on your number of guests.  If the plates are sold individually, they are each gifts at $18 – BUT I would expect that people will probably buy you more than one.  So if you wanted to, I guess you could kind of count 4 as a single $72 gift…
